So I’ve been trying to get this on the blog for a while now. It’s been a long time coming and here it is, just in time for it to watch winter hit itself with the doorknob on the way out. But not before I send it off properly with this creamy chicken noodle soup.
We still have a few days here and there forecasted that dip in the 50’s, but for the most part we’re enjoying some nice weather. I know as of this writing a bunch of you are still getting snow, so to that I say you better make amends with Elsa soon, it’s freaking spring already! While we had some bitter cold days and 2 or 3 good snow falls, it’s nothing compared to what others have gotten.
Still though, it was enough to get the wife down and depressed for weeks, wishing she never left Florida and its 2.5 seasons (that’s Mild, Hot, and Sweltering for those wondering).
But one great thing about the cold is that it’s soup making weather! Even now with the seasons changing it’s the absolute best time for chicken noodle soup. And if you’re anything like me, you’re nodding in agreement while blowing your nose, sneezing, and/or coughing onto your screen. The seasons transitioning never got to me until I moved up here, but I guess it’s a small price to pay for having a winter you actually need a jacket and long pants for.
This recipe, as I said, is one I’ve been making a while. You’re not really chained to the stove for hours. When it’s done it’s done, and the flavor is immense. It’s one of those feel good, hearty, let-me-sit-down-and-unbutton-my-pants-for-a-few-hours kinda soup. On top of it being easy and full of goodness, don’t get me started on the qualities chicken soup is known to have on people. Whether you’re feeling sick and icky or down and out, chicken soup is there to pick you right back up. Couple it with a nice, toasty piece of crunchy bread and you’re ready to take on the world! …Right after your nap.
The absolute perfect way to get through those cold wintery nights. Paired with a nice crusty bread, this will be literal chicken soup for your soul.

1each -Fryer Chicken2 1/2 - 3 pound, cut up
3 1/2quarts -Water

Instructions
Find yourself a nice big pot. Biggest I have is 8 quarts and it works fine. Cut up the chicken like you would, and then plop it inside the pot along with everything else that goes in the stock.
Turn up the heat and let it simmer for about 45 minutes. Once it's done, get a plate and put the chicken on it, then skim out the onion and bay leaves with a strainer or perforated utensil.
I really hope you're reading ahead and see that in the 45 minutes to make the stock, it'll be the perfect time to prep everything else that needs cutting...
45 minutes later, If all went well, you should have about 3 quarts of stock which smells mighty fine.
If for some insane reason you didn't prep yet, looks like you're stuck with it now! While waiting for the chicken to cool, get your celery and clean it all nice to get the dirt out. Cut up your carrots, slice your mushrooms, do all that fun stuff. Remember to try and keep everything uniform and bite sized.
By the time you're done, you should be able to handle the chicken. Start peeling off the skin and set it aside to discard it. You're also discarding the cartilage and the bones. Pick the meat off the bones as much as you can and put it on a plate. I tear it off in chunks then tear it apart till it's small. By the time you go through it all, you should have a nice mountain of skin/bone/cartilage-free chicken meat.

Now let's get this soup going! This is all going to be non-stop from here so have everything ready to go.
Get the stock heated up to a good boil again. Add the carrots and cook them for 3 minutes.
Then add the celery and cook for about 8 minutes.
Next, add the egg noodles and cook them for about 1-2 minutes less than the directions on the bag say they should be cooked.
Once that timer goes off, add the mushrooms, chicken, parsley, and rosemary.
There's a lot going on in the pot right now so don't be afraid to give it a good stir.
Add the ever important parmesan and cream. Give it a good stir and cook for another 2 minutes. DON'T SKIP THE PARM! Respect it. Thank it for its delicious sacrifice and make whatever promises you have to to make sure it goes peacefully.
Stir it again and taste it.
Odds are good you're going to need to add some more salt and pepper.
So after the seasoning is adjusted, you are done!
Notes
This is a very straight forward recipe and nothing crazy so it should be a cinch to make.
You'll want to use a whole chicken because you're making a stock as the base for the soup. I just cut it up by separating the legs and thighs as well as the wings from the rest of the chicken.
Alternatively though, if you really didn't want to deal with it, you could totally just use chicken breasts. I would use store bought chicken broth/stock instead of the water though.
Yes, I've done this plenty of times with chicken breasts. You're fine.
The onion doesn't have to be cut a certain way. Just rough chop it into the pot because you're only using it for flavor. The bigger the pieces, the easier it is to extract when you're done with it.
I used baby carrots and sliced them the same size I sliced the celery. It's always good to try and keep everything the same size in a soup.
If you don't like mushrooms, don't use them. If you love them, add more.
I unfortunately forgot to get parsley, in case you realize there isn't any green in the soup. Which you should because it looks like it's missing it.
This soup is best buds with parmesan cheese. I don't know what it is, but I just love pouring it on there. So if you're a fan of parmesan, go ahead and bring it to the table when you're ready to dig in.
I'm sure you can use half & half instead of the heavy cream.Don't be afraid!

So salt it up! Something to keep in mind though - you can always add, but you can never take away. So while it's important to use salt, remember to add it slowly, stir, taste, and repeat. It's better to take your time than mess up a whole pot of soup.

Put a nice crusty loaf of bread in a hot oven to warm it up while you set the table. Tear off some bread, dip it in the soup, and I promise it’ll be a highlight of your day.
When the soup is cooled I put it in a container with a lid and stick it in the fridge. There it could stay for a few days.
And if there’s only 2 of you eating it (our kids don’t like soup), it could last for about 3 nights! Ugh, just thinking about it makes me wish I had some right now.

A few weeks ago for the wife’s birthday we decided to take a trip. We wanted to go somewhere the kids would enjoy, but more importantly, somewhere that wouldn’t make us have to rearrange our spending habits for the next few months like Disney is known to do.
So we took a little 5 hour drive to Atlanta where we visited the Georgia Aquarium!
It was a first time for me on a few fronts. I never stayed in Atlanta before and the aquarium was also new to me. The kids didn’t know what they were in for till we got there so the anticipation was immense.
We left the hotel in hopes of grabbing a quick breakfast before getting there. And that’s when the tourist in us came out…
If I were tell you downtown Atlanta was barren of fast food restaurants you could just drive up to and order a chicken biscuit from, you probably wouldn’t believe me. Heck, I wouldn’t believe me. But that’s what we encountered. I’m not sure if the GPS was just in a bad mood or what, but we would search for a McD’s (because we’re terrible parents and that’s what the kids like) and it would take us on a 10 minute tour of the city before getting there. “Your destination is on the right.” …I kid you not, our “destination was on the right/left” about 7 times and each time there was nothing but office buildings. My guess is these were McD’s in the buildings? I dunno. I DO know, we gave up and considered a gamble on a local place.

We searched, found good reviews, and took another 10 minute tour. Where we wound up was a sit down breakfast joint specializing in biscuits. Great, right? Except it was about the size of my walk-in closet. On top of that, it was packed to the brim with people sitting and coming in and out. Taking a now hungry and PO’ed toddler in there would’ve made for quite the story, but it’s one I was not ready to document just yet.
So we drove outside the city to finally find a street that was lined with fast food joints. I cannot begin to describe the pure joy I never thought I’d experience by seeing those golden arches. The thought of finally getting our day started after more than an hour of driving around downtown Atlanta and getting hungry kids fed was enough for me to go back to the hotel a happy camper. But there was still the aquarium!

We got there and quickly realized what we had done. The common, rookie mistake of trying to take a toddler somewhere when they haven’t slept right. I swear, you’d think we just rented him out for the day or something. Although, it’s not completely our fault. The only way we could’ve made it was driving till 3 in the morning, so we were all tired at the start of this fun filled day.
But we didn’t let something like a lack of sleep stop us! From the minute we walked in we didn’t hesitate to start exploring.
Seb has been to an aquarium before, but Lucas.. This was a whole new experience for him.
Can you imagine? Experiencing an aquarium for the first time and having no idea what it was? At first you would think a kid would freak out, but he loved it beyond explanation.
He loved it almost too much because it was a downright fight to get him away from any glass he could press his face up to.
Still though, it was worth that fight because seeing his excitement every time he saw something new erased the dramatic, baby-meltdown that just happened minutes before.
Seb loved it just as much. It was a surprise trip for him so he was insanely excited when he figured it out.
He’s reaching the end of an Octonauts kick, but I’m sure this prolonged it a little more.
His favorite were the jelly fish and for good reason. I don’t know what it is, but Seb and I could watch jelly fish bopping around all day.
Not to mention take pictures of them all day!

And then when the pictures gif themselves? Super bonus!
A big (pun intended) reason to visit this aquarium is for 2 massive Whale Sharks! It’s actually the only place outside of Asia where you can see Whale Sharks like this.
They were imported from Taiwan via air, boat, and truck! And before you start going all crazy on me, the aquarium actually saved the Whale Sharks from death. They would’ve been killed and eaten thanks to Taiwan’s annual fishing kill quota if the aquarium didn’t buy them and have them transported. So good on them! Since 2008, Taiwanese officials have banned the fishing, capture, and exporting of Whale Sharks. So this is not going to be something to expect from other aquariums. Even with their size, they look like they have a good space in the 6.3 million gallon tank. It’s no wonder why the Georgia Aquarium was the world’s largest aquarium when it opened back in 2005.
I tried to get a good picture but they weren’t swimming too close to the tunnel. Still though, no picture can do it justice. I can’t even describe how huge they are. Definitely worth the trip if you are an admirer and lover of the ocean and the life it possesses.
Another first for aquariums are the Manta Rays. The first Manta Ray for display in an aquarium was here in Georgia in 2008, when it was accidentally caught in a shark net. The Georgia Aquarium is one of the 4 places you can visit in the world where you can see a Manta Ray.
There are six different exhibits you can walk through and explore here and all of which will leave you satisfied. With a broad range of animals ranging from cuttlefish to penguins, and from seadragons to whale sharks, you won’t leave this place disappointed!
Sadly, mainly due to Lucas and his refusal to take a nap (who would want to nap there?!) we decided to call it a day after we saw everything. It’s an amazing aquarium and I wish we lived closer because it’s definitely the type of place you get a yearly pass to. But after 4 or so hours with a cranky kid, we were ready to go. And sure enough, not 5 minutes after sitting in his car seat, Lucas was out like a light.
Oh yeah. And when we left the aquarium, we turned the opposite way we went in the morning, and what did we see? A freaking McD’s across the street! I wanted to throw something at it but I was too tired.
On the way to the hotel the wife kiddingly asked if I wanted to go home that day instead of the next morning like we planned. I looked at my watch, figured we’d get there by 11, and said heck yeah! We had a little issue with the hotel that I won’t describe here, so they let us skip out of our 2nd night with no fees. We packed up and jumped in the car to head to where the Buffalo roam.
I was tired, but the adrenalin of knowing we get to sleep in our own bed that night was enough to get me through. Oh, and singing Disney and Broadway tunes in the car. That helps me get through, too.
It was a great trip. Everyone will remember it, I’m sure. And it’s good to know it’s not too far of a drive. Maybe one day we’ll go back to just let Lucas and Seb sit in front of the glass for hours. I’m pretty sure that’s something they’ll both be totally ok with.

Alright! New year, new you, whatever it is people say.
For a few months now, whenever I checked out the site here I saw a few things that needed updating. I couldn’t do anything, of course, because for the past few months if I had an itch I had to schedule a time to scratch it. But I finally said that’s it! I made it a priority and I’m getting it done! And I did. It took me like 2 weeks but I think it’s where I’d like it to be. Funny thing is, after doing nothing but working on it, the changes I made are barely noticeable unless you really knew the layout of my blog. Oh well, it still makes things look better around here so that’s what counts! Why so long to fix it up? Thanks to big responsibilities like cooking and cleaning, and smaller responsibilities like taking care of the kids, I only have like 2 hours at night to work on stuff. Then there’s the internet and that dark hole, so don’t get me started.
I do feel bad though. Whenever I’m focusing on something to do with this place I tend to put everything else on hold. So things like twitter and gaming took a back seat while I got this done. See! Remember that when I go weeks without a post.
So what were these changes? Let’s check them out!
First, there was this ugly, white bar that mysteriously appeared just below the header one day. Absolutely no idea how or why it popped up, but it did and it stood out like a sore thumb. Now I’ll be honest with you despite how crazy this may make me out to be, but that little bar was the reason why I started updating stuff. That tiny, insignificant little strip of white threw off the whole feng shui of my site. It was an eye sore and I had to fix it. Then, after I fixed it, I figured I might as well do this, then that, then that. So I guess I should be thanking that white bar. But you know what? I’m not.
Next I fixed my little welcome message on top of the sidebar. That needed to allons-y pretty bad. It was long, had like 3 fonts, and then my logo was awkwardly in the middle. It looked like a letter left behind by a pirate. I swear, none of you are my friends for letting me have that up there so long. I made it short and to the point instead of dragged out. Decided to not add a picture, but instead I did sign it properly. And behind the signature, in lighter text, is my name I’m using for every social network – The1llusiveMan. I decided a few months back to fully embrace the name I signed up on twitter with all those years ago and just use it everywhere. It’s how I’m known, and it only makes sense to carry it with me wherever I go.
If you click on the updated welcome message (like it tells you to do), it takes you to my newly spruced up About Me page. If you’ve never been, you should check it out and let me know what you think. I get a little wordy, but you’re going there wanting to know.. you know.. about me, and I’m a wordy kinda guy so you asked for it by clicking. I updated it with more info, a picture of my hiding face because that’s how I roll (I’ve never posted my face anywhere except to a small circle on Google+), and a sweet music player! I’m really happy with the music player. I loaded up over 70 of my favorite songs! Yes, I went crazy and channeled my MySpace page from 15 years ago. Am I sorry? Heck no! It’s a shuffling playlist too so whenever you go to the page a different song will play. And yes, it automatically plays. I figured no one would press play on their own so I did it for them. Everyone will probably mute it or quickly hit stop, but I know it’s there and I know it’s cool. And just like high school, that’s all that matters.
Back to the sidebar, I removed and relocated a few things. The buttons for following me on Feedly and Bloglovin’ are gone, and so is the email subscription form. The last two were relocated but the Feedly button was ditched.
The email subscription form (or, link) is now in 3 different spots – in the top bar, all the way in the bottom of the footer, and directly under the comments. I changed my delivery service as you may have noticed if you’re signed up, so now subscribing to emails is a lot more convenient, organized and cool. I copy and pasted the list of current subscribers so if you’d like to get on that list what are you waiting for?! Click on one of the links and get the ball rolling! But… If you were already on the list (you should know because of a spiffy new email from me regarding this post), I must ask a favor:Click on one of the links – if you dart your eyes to the top right corner of the page you’ll see it, or just wait till you’re leaving a comment telling me how awesome my updates are 😀 – and update your profile with your name so I know who is who. There are a lot of addresses and I’m curious about the spam:person ratio.
The Bloglovin’ button also found a new home in the social network bar. Have I ever mentioned how much I love that bar?! I think it’s my favorite thing about this place. If you look to your right, you’ll see the newly updated icons for all the social networks I’m a part of. I reached the maximum limit because I’m a dork so if I ever get a hair up my butt and go back to Google+ I’ll have to remove one. Sorry, but it’s going to be tumblr. I already decided and it wasn’t even that hard of a choice.
Along with Bloglovin’, there’s another new icon – Twitch. If you’re unfamiliar with Twitch, it’s probably because it has to do with gaming. The PS4 launched with the capability to live stream whatever you’re playing to Twitch, so ever since then it’s been used like crazy by PS4 owners because of it’s ease of use and integration in the system. If you’re totally clueless to what any of that means, it basically shows video in real time (with a slight delay) of whatever I’m playing. So if you’re interested in checking out a game and I happen to be streaming it, you can come watch me play and interact via chatroom. It’s the freaking future, let me tell ya. I put the icon there because I love to stream games I’m playing. Hardly anyone ever checks me out, but whatever, it’s still a fun feature!

Further down the sidebar you’ll notice I took out the Tag Cloud. I don’t know why, but I really like the tag cloud. So much, in fact that I relocated it to the bottom of the site in the footer. It’s front and center and impossible to miss. So if you’re ever extremely bored and want to randomly check out posts, give the tag cloud a spin and see what’s there.
On either side of the tag cloud you’ll notice quotes. I love quotes! All sorts – from movies, real life, motivational, whatever – there’s always room for a good quote. These are are all some of my favorite quotes from some of my favorite movies, so I hope you enjoy them. If you don’t know where they’re from, I linked the movie to the character’s name. So you can look more into it if the quote really tickles your fancy. I don’t know, I love real life quotes like from powerful figures in history, I mean, those are supposed to be the ones that really mean something. But something about movie quotes really get me. I think it’s my love of characters and their development. If you have a favorite movie, then you should also have a favorite character. And if you do, then you know what I’m talking about. Learning about this fictional being, who they are, what they represent, is half the fun of whatever movie they’re in. And the things they say either embody or define they’re character. So I really love to pay attention to their lines and words. My favorite one down there? Probably Snape’s. It’s just one word, but everything behind that one word? Ugh, fuhgettaboudit.

Along with the font that I also changed, I think that about covers it for the updated stuff to the main site. The sidebar was a big concern for me and it was addressed. Now it’s streamlined, cleaned up, and doesn’t feel like it’s all over the place. The social bar has a new look with new icons and new designs, the footer is being utilized more than ever, and the email subscription service is more reliable than ever. And let’s not forget the excommunication of that ugly white bar that started it all. So yeah, it took me 2 weeks, but I’m insanely happy I did it. Happy New Year, blog!
Oh, I organized some other areas too by adding some categories. If you scroll up and hover over The Man in the menu bar, you’ll see I added a Humpday Updates section. I figured it’s going to be my somewhat-weekly updated tag so I gave it it’s own spot. Also, under The Dad button in the menu, I added Family Travels. I always seem to have posts dedicated to weekend getaways we have, so I started a category for that.
Also from the menu, you’ll see I’m currently working on finishing up my Links page. I have a lot more stuff to link to, but if you want to go check out some of my favorite places to visit on the net, click on the Cool Links button under the header!
Aaaaaaaaand I think that’s it! Wait… That’s all I did?? I guess it is, haha. No, it’s not a major overhaul, but it cleaned up a bit. Consider it a .xx update rather than a x.00 update. I still really love the layout of this place and don’t see me changing it soon. So I hope you like it too!
