It’s been a long time since I felt inspired to write something on a whim. Usually my blogging has consisted of days of planning, editing dozens of food pictures, making sure at least 3 planets are aligned, it’s been a lot more complicated than it needs to be. But I’ve seen enough today to make me want to sit down and document how I feel. Because the excitement is just too great to let the opportunity pass by.

Yesterday, long awaited information was released about No Man’s Sky. Now, if you haven’t been paying attention, No Man’s Sky was announced years ago at E3 2014. The independent studio Hello Games basically stole the show with the hopes and promises they said they were going to deliver. Time went on and every convention and show that passed after that was silent or only gave a whisper of news from the ambitious title. It was known that Sony opened their wings to Hello Games and offered help and resources in the development process. I was one of the many who were patiently waiting for more news to come out. More solid info on how the game will work, how far can you really go, and when can we begin exploring, were just a few of the hundreds of questions I’m sure were floating around.

The idea of exploration and discovery excites us as humans. It’s in our DNA. So being able to do so to our hearts content in the infinite vastness of space has me the most excited I’ve been for a game in a long time.

But finally, here we are. Not only do we have a firm release date of June 21st, but we also have prices, Limited Editions, game play videos, interviews, the works. I was able to secure a pre-order for the Limited Edition on PS4, myself ($79.99 reg/$63.99 with Prime). But PC players are lucky with the $150 Explorer’s Edition. With a cast metal ship replica, a bunch of other goodies and a limited run of 10,000, it definitely looks hard to resist for a collector like me. iam8bit also has an official collection of merchandise for No Man’s Sky if you’re interested.

What got me the most excited was the Hands On article IGN put out. In there you’ll find Ryan McCaffrey’s exciting time he spent playing a demo of the game. I could tell just by reading it how absolutely giddy the entire experience made him. And I can totally understand why. Because after watching the videos I’m right there beside him as far as excitement goes. If you haven’t seen it yet, I highly recommend setting aside 18 minutes to watch the demo, so you can see for yourself the potential this game will bring.

With literally an entire galaxy’s worth of things to discover, how can you not be excited? I mean, just imagine…

You’re on a planet. It’s tropical. Lush plant life in a combination of colors you’ve never seen. Waterfalls, green seas, small indigenous species roaming freely. A place your imagination would’ve had trouble conjuring. Then you get on your ship, and you zoom off into space. You chart a course and warp to another planet. This one is covered in snow and ice. Giant creatures wandering about as if it’s just a regular day. Your suit setting off an alarm warning you it’s only able to tolerate a few minutes in this cold. So you get back in your ship and you find another planet. This one nobody has ever been to. You’ve just discovered it, and you can do the same with all the flora and fauna that calls the planet home. You even get to name that little chicken-like creature that just walked passed your feet. And when you’re done, you get in your ship and get to do it over, and over, and over again.

I don’t know about you, but June 21st went from “so soon?!” to “I have to wait how much longer??” in about 5 minutes.

I’m not too thrilled though… Here we are, on the launch day of Twilight Princess HD – a game that I’ve been pretty excited to play for a few weeks now. And a few short days away from the release of The Division which should spark some co-op fires in my heart that Destiny let fizzle out. Yet, all I want to do now is curl up on the couch and explore space in No Man’s Sky. I think it’s cruel and unfair of Hello Games to rob me of these immediate pleasures. Shame on your inconsiderate hearts, guys.

But of course, I’m also happy. Not only because I finally know when I can get my hands on No Man’s Sky, but also because it doesn’t feel like an ambitious dream anymore.

After seeing it being played, and hearing the reactions from Ryan McCaffrey, I’m sold and feel like all the time I’ve spent waiting for this game has been worth it. The idea of exploration and discovery excites us as humans. It’s in our DNA. So being able to do so to our hearts content in the infinite vastness of space has me the most excited I’ve been for a game in a long time. June 21st might as well be light years away.

Happy holidays!!

Just to be clear, I’m not the politically correct type to tell everyone happy holidays. No offense to anyone, but I’ll Merry Christmas your ears till the elves come home. But since we’re in the holiday season and it’s not Christmas yet, that’s how I’m greeting you. But anyway!

How’s it going?! Christmas shopping done? Holiday rush getting the best of you? How many elderly people have you pushed out of your way to get a sale? It’s ok, you could tell me, this is a safe place.

There’s a TON of stuff going on around here lately. I miss the days when the only thing I worried about during Christmas time was how many presents are under the tree and how long before I could open them. I’ve talked about it on the podcast I co-host. That as a child, the month of December used to last like an entire year. But now that we’re adults, it flies by in an instant. To the point where I don’t have a problem putting Christmas decorations out in the beginning of November just so we could enjoy them longer. It’s really crazy how much it has changed, but we have to do what we can to enjoy it.

So this year, we tried something new… We got a real tree!

For the wife, this is nothing new. She has fond memories of getting a real tree almost every year growing up. Having that fresh scent filling the home and all that warm fuzzy stuff. But for me? I was a real-tree virgin – scared and cautious about all the things that could go wrong, wanting to take the chance, but fighting myself along the way. Yeah, everyone does it, but there’s always that “what if?”.. Increased chance of fire, rogue armies of ants invading the home, crazy chipmunks, rabid squirrels, the list goes on and on. I was totally fine continuing the tradition my parents instilled in me of having the same plastic tree for 25+ years. But I’ll tell you the truth, after the adventure of getting it and putting it up, it’s something I’m looking forward to doing from now on!

See, we didn’t just go to the corner lot and pick a tree. Nope, we plotted a course and traveled 2.5 hours to a tree farm in the mountains! If we were going to do this real tree thing, we were going to do it right. We were going to drive up this mountain, pick a tree, cut it down, and by golly it was going to be the most beautiful tree that nature created!

So we get there and we see a little sign for the farm. “Follow the road to the top of the mountain.” O0o0o0ok. The road was normal at first, but then the pavement went away, and suddenly we found ourselves on a one lane, uneven gravel road going up a mountain. I’m not going to lie, I was freaking scared. Not of the road but… Ok, yeah, I was scared of the road…

But I didn’t know where we were going. I don’t know this place, I’ve never heard of it. The website was like something straight from the 90’s, but it looked alright to me so I picked it. It didn’t dawn on me till we were escalating this eerie terrain that we could be going up to some crazy dude’s backyard where he lures people with the false hope of finding a perfect tree.

Alas, the road was daunting, I’ll admit that. But once we got to the top, it opened up to this big tree farm with a view of mountainscapes every way you look. It was pretty glorious.

The last thing the wife said before we got out of the car was “It’s just a tree, we don’t need to be spending 2 hours finding the perfect one…” But you know me.

So 2 hours later, we finally found it!!

We actually had found one earlier, but we walked away from it and even though I assured the wife I knew where it was, I seemed to have misplaced it among the dozens and dozens of other trees that looked amazingly similar.

So we got it cut down, wrapped up, put on the car and away we went. We haven’t ran into any crazy bugs I found bugs living in it! I went to water the tree and had something crawling around my arm. I was ready to drag it out and light a freaking match but the wife looked it up and found that there’s a 99% chance it’s a bug that lives off of tree sap. So it’s harmless.

Aside from that, the vacuum found a new home right next to the tree. Damn pine needles. They act like the tree is dying or something. I haven’t really noticed the famous scent that’s supposed to send my subconscious into a forest full of Evergreens, but that doesn’t stop me from enjoying it. It was really something great to do as a family, and every time I walk by it I remember that’s not just our tree, it’s our tree. So what if it’s too big, has bugs, is leaking sap like a faucet, looks like there’s a pine needle carpet underneath it, or it’s drinking more water than I shower with. It’s ours.

Anyway, enough about trees. Let’s talk chocolate!

Well, candy melts, if you want to get technical. There’s just something about candy melts that I’m drawn to. Especially with these special silicone molds. I think it’s because they’re so simple, yet come out awesomely, it’s hard to not appreciate them.

This year, Wilton has their usual and amazing Candy Cane Candy Melts, as well as the Sugar Cookie ones. But they also have this new flavor… Salted Caramel Hot Cocoa…

If you read that and didn’t gasp out loud, then you obviously aren’t understanding the severity of the situation. Here, let me try it again.

And they taste just as good as they sound! You get that salted caramel right up front, then it finishes with a hot cocoa taste that lingers in your mouth. So, so good.

So I figured since they tasted so good, they could really just shine on their own. Which makes showing off the silicone snowflake pan a breeze. Absolutely perfect for making something simple and amazing stand out on a platter or something at a Christmas party. The snowflakes are small and easy to grab a few, unlike the equally awesome, yet bigger bark mold I did last year.

But then I started to think… It’s Christmas. Here I have this awesome mold, I can’t just make something simple and call it a day. So I recalled the wife’s addiction to peppermint hot chocolate and the rest is history. Let’s check it out.

Notes:

  • You will kinda sorta need the Wilton Silicone Snowflake Mold.
  • There’s really nothing to this. If you know how to work the ultra hidden, super secret, never-been-pressed-before setting of your microwave called “power level”, then you’re golden, my friend.
  • If you have another combination of candy melts or chips you’d like to use, then by all means, go nuts.
  • The packaging states that each cavity should get 3 candy melts. If you’re doing what we’re doing here, which is melding two different flavors together, then the rule of 3 is fine. But… If you’re doing just straight up, one flavor of candy melts, then for certain cavities I suggest using 4 candy melts. The mold has 3 shapes and the 6-pointed star shape is fine with 3 pieces. But I found myself cracking the other shapes in my first few batches. The intricate design of the snowflakes is great, but doesn’t make it easy when the candy is on the thin side. Putting 4 candy melts in those shapes instead of 3 helped a lot, I think.
  • But again, this is if you are just melting one flavor of candy melts in there.

Ok, getting to it..

  • Get yourself a handful of candy melts (it doesn’t matter which kind), and start filling the cavities. As discussed in the notes, I broke up the 4th candy melt to make it fit in the crannies of the snowflakes.

  • Next, pop it in the microwave for 2 minutes on 50% power. When it’s done, let it sit in there for about another 30 seconds. When they come out, they should be fully melted. If they’re not, get a fork or something to break up and mix around any hard pieces still not melted. Pop it back in the micro for 30 seconds at 50% power again. They should be ready now and completely melted.
  • The trick to spreading it out? Lift it about a foot off the counter and drop it. Don’t worry, it’s silicone. An elephant could step on it and it’ll still be usable*. After it’s spread nice and even, it’s time for the second layer.

  • Get whatever you’re using – candy melts, chocolate, whatever – and melt it in a bowl. Remember, I used the Salted Caramel Hot Cocoa Candy Melts here. General rule for melting chocolate in the microwave is about 1 minute at 50% power, then 30 second intervals at 50% power till melted. Once it’s ready, just take a spoon and spoon some into the cavities.

  • When you have the second layer in all the cavities, you could shake it back and forth to spread it out a bit. I dropped it on the counter a few times, but I was afraid it was going to sink the top layer into the bottom layer, so I wouldn’t really advise that. Either way though, you’re going to need to get in there with something narrow to spread the top layer into all the edges. Might get a little tedious but it’s not terrible.

Once everything is spread out sprinkle it with some hot cocoa mix. I just used a pinch, but if you want to cover it more, or even use something else like sprinkles or crushed candy canes, then be my guest.

  • When done, pop it in the fridge for about an hour. If you’re in a rush you could put it in the freezer for about 40 minutes, as I did every time because I’m impatient.

  • Now the scary part! I found, just to be safe, it was good to take the edges and spread them out first. Separate them from the candy so it’s easier to extract from the mold without cracking. I’m telling you.. I broke a lot of them. But this method saved every single one I used it on.

  • When you separated the edges, just peel back the mold while pushing up on a cavity. The candy should come right out, though with the intricate designs of the snowflakes, you’ll have to peel them out a bit.

And that’s that. Rinse, and repeat for as many as you want. The combination of salted caramel hot cocoa and peppermint made my wife a huuuuuuuuge fan of them. The added sprinkle of mint flavored hot cocoa mix was the topper and made them addicting.

October is basically over! Isn’t that just plain ol nuts?! I mean, we’re a whole two months from the end of the year! It’s madness.

Even more madness? This is a post about something that happened waaaaaaaaaaaay back in March! Hahaha, yeah, I know! What the heck am I doing? The answer is: I have no idea!

Honestly, I made this with every intention of remaking it in the future. Unfortunately, with it being October seemingly over night, I never found the time to get back in the kitchen and do it over. So here we are, 7 months later, catching up on old times.

This was Sebastian’s 5th birthday cake. I thought about it, made it, and almost instantly thought of 10 different ways I could’ve made it better. But you know what? Sebastian was absolutely floored!

See, when he’s not going crazy about Star Wars, he’s going crazy about super heroes. And his love for the bad guy always shines through, because his favorite character (from Marvel, at least) is Loki. Yeah, of all characters, my son looks up to Loki. Brother of Thor, and the God of Mischief. Kids!

Anyway, his birthday landed at a perfect time. It was just a few days after the figure for Loki was released for Disney Infinity 2.0. I knew it would’ve been the best cake topper for him because he was asking for him since the game released, and I was right. I just had to figure out how to execute the cake.

If Loki was the topper, then picking a theme was easy. Ice and snow had to be present seeing as how Loki is part Frost Giant (stay with me, non-nerds). I thought candy would look awesome as ice, so a quick search led me to this crazy looking Frozen themed cake. I knew right away that’s what I wanted to do for Seb’s cake.

Another event that lined up perfectly with all of this was the Wilton Sweet-Up which took place a few weeks later. At the time of making the cake, I already had the Color Right System in my possession, so I broke it open to see what it could do, knowing I wasn’t going to be able to share how I made the cake until after the Sweet-Up.

So how did I put the cake together? Let’s find out…

Ice Cake

 

Your favorite cake recipe or box (not yellow)
Colored with about 5 drops of Blue from the Wilton Color Right System

 

Wilton Buttercream Icing

 

Hard Candy for the Ice

 

2 cups granulated white sugar
2/3 cup light corn syrup
3/4 cup water
4 or 5 drops of Blue from the Wilton Color Right System
(optional) flavoring of choice

Notes

  • You’re going to need a candy thermometer. And the Loki figure or whatever other ice themed figure you’re topping it with.
  • For the buttercream, I did all shortening instead of a shortening/butter combo. This ensured a pure white color that you need for the snow. Plus it’s how mama always did it.
  • The effect I was looking for when putting the cake together was a supposed to be an icy terrain covered by patches of snow. The cake itself was meant to be a huge piece of ice and the buttercream the snow, with the sugar bringing it all together.
  • It looked better in my mind. Haha. But still, it was loved by my kid so whatever. The main focus is the figure surrounded by the jagged ice candy, and that’s what stands out the most. I would have fixed it to the way I described below, but by the time I finished it was already like 10pm the night before his birthday and didn’t feel like making more buttercream.
  • A huge reason why I wanted to redo the cake for the blog was because I was a fool who didn’t remember my basic colors from grade school. I decided to use yellow cake mix that I had in my pantry. So as you could imagine, trying to make a yellow cake turn blue left me with a totally different outcome. Green! (head to wall)
  • Another reason is the way the buttercream doesn’t cover the whole cake. I went with my original plan, to have patches of snow so the icy looking blue cake can show through. But with having to cut off the outer crust thanks to it being straight up green, it doesn’t look too great. Again, it didn’t matter, but I have my personal standards that were irking me about it.
  • So if you ever try to recreate this, try and aim for the entire cake covered in icing, and random pieces of ice all around. It’ll be a much cleaner look and much more presentable.
  • The color was pretty easy to reach with just a few drops of blue from the Wilton Color Right System for both the ice and the cake.
  • While this was made for Loki, it could also work for Elsa.
  • This could easily be done with any cake recipe or mix. Just… make sure it’s not yellow.

Alright, so let’s start with the showstopper – the ice candy.

When I tell you this is insanely simple, I’m not trying to fill you with confidence. Making candy is a cinch, you just need a candy thermometer. Make sure it’s calibrated correctly though. I had never made candy before so this was new and exciting. I was expecting something more tedious but when I finished I was like “really?!” Just be sure to have everything ready before you start. You have to be quick when you’re working with candy so every second helps.

  • So first and foremost, do what I said and calibrate your thermometer. If you don’t, then nothing will work. You calibrate a candy thermometer by putting it in a pot and bringing water to a boil. Water boils at 212°, so check your thermometer when it’s boiling and adjust the temperature of your recipe accordingly. For example: If your thermometer is saying the water is boiling at 200°, then subtract 12° from whatever temperature you’re supposed to bring your syrup to a boil.
  • Next, be sure to have a nice sized cookie sheet or a sheet tray with some depth to it, lined with aluminum foil that has been sprayed with non-stick. Don’t go crazy with the spray, but don’t be cheap either. Last thing you want is to go through all of this and get your candy stuck to the foil. Another thing to have ready is foil covering your working area. This was a great tip from Chica and Jo and it helped with clean up a lot. So line the sides of your stove with a few sheets of foil to protect from splattering sugar syrup. Last thing to have ready is a nice wooden spoon, along with the coloring at arms reach and ready to be used.
  • You start by putting the sugar, corn syrup, and water in a pan, and giving it a good stir. Once it’s incorporated, hook up your candy thermometer and make sure it’s not in direct contact with the bottom of the pan. Throw it on high heat. You need it to go quick because you’re making candy, not caramel.

  • At this point, once the heat is on, there’s no turning back. Don’t go and fold laundry, this demands your attention for the next few minutes.

  • As the sugar is boiling you’re going to have lots of steam. But it will dissipate once the water evaporates, making it much easier to read the thermometer.

  • You’re watchin’ and waitin’. The temperature you need to remove the pan from the heat is 300°! But you’re looking for it to reach about 295° before you have to work fast.

  • Once it does hit 295°, drop the coloring and stir it up slowly. You’ll notice turn a really nice blue, but don’t sit there staring at it because by the time you’re done stirring it’s probably at 300° and needs to come off.

  • At 300°, the sugar is done and it needs to be poured onto the tray. The cooking process needs to be stopped or else the color and texture could be off. At this point, if you didn’t think I was serious about being prepared, then you’re probably kicking yourself while a mini-me is laughing at you shaking his head from on top your shoulder.

  • So when it hits 300°, remove the thermometer and just put it down on the nearby foil, and carefully pour the sugar onto the foil lined sheet tray. Try and have the tray sitting where you’re going to leave it. Somewhere flat and where it’s not going to be messed with. The other side of the stove top worked for me.
  • When everything is out of the pot, just put it in the sink with water and soap to soak in it for about an hour. Toss your thermometer and spoon in there as well.

  • Everything is done and now you’re just waiting for it to harden. I left it for about 2 hours to be safe. Once ready, it’s time to have some fun!

  • You’re looking for long pieces. Remember what the cake top looks like. The longer the pieces, the more omph the presentation is going to have. I tried hitting with a butter knife but it wasn’t doing much, but the best way would be by hand.

  • So just grab it on the side and push down on the top with your thumb. Try to keep the sheet of candy low so you don’t shatter the entire thing in one shot.

  • Even if you do, it’s alright, it’s not the end of the world. You’re going to need a few long pieces and one wide enough piece where the figure can stand on. As long as you got that you’re fine.

  • Now that the hardest part of the entire thing is out of the way, go ahead and get your cake made.

  • When the batter is done, just put a few more drops of the blue color from the Wilton Color Right System and watch the magic happen.

  • And remember the tip about staying away from yellow cake mix. The cake itself will come out a brilliant blue, but the outside was much more green and I had to cut it away. I’m still smacking myself over it, trust me. I wish I had more patience and time when I was making it because I would’ve fixed it up more. But hey, the main event is the candy so that’s what we’re focusing on!

  • When the cake is baking, make the buttercream. Like I said, you want to go all shortening and no butter because it’s going to give you a pure white icing that looks great as snow.
  • Once the cake is cool and everything is made, it’s assemble time. Here’s where you do what I say, not what I do. Just go ahead and cover the whole cake with icing. It doesn’t even have to be perfectly even, remember, it’s snow, and snow falls wherever it wants to. Once it’s covered, start placing your ice candy. Place some smaller chunks around the cake pressed into the sides, and a wide one on the center of the cake on top. Go ahead and place the figure on top and then get your nice long pieces and place them around the figure.

And that’s the cake! Or, the cake top, to be more specific. It’s a great, great idea, especially for those who have super villain loving children like I do.

Again, I wish I would’ve been able to do it over again, but I’m glad I took these pictures so I could at least show you the awesome idea. With winter coming up and all those Elsa and Loki themed birthdays, this will be a great cake to put together! The Wilton Color Right System did a fantastic job with the blue I was trying to create.
